Air fryers provide a compact environment — one that’s generally smaller than a microwave — for heated air to be blown around quickly, heating up and cooking whatever’s inside it. The hot air crisps food, allowing you to use less oil than you typically would while cooking in a traditional oven.
One reason people love using air fryers is because they heat up quicker than a standard oven. This makes them a great option if you’re looking to cut back on the amount of time it takes to get food on the table. “[You have to ask] most of us who have air fryers, ‘When’s the last time you turned on your oven?’” says Pitre. “Your oven takes about 30 minutes to preheat, and your air fryer takes two or three.” And because air fryers heat up so quickly, you won’t heat up your kitchen like you might while using an oven.
There are two basic styles of air fryers, which can be distinguished by their capacity, how much physical space they take up and how difficult they are to clean.
Pod-shaped air fryers are about the size of a coffee maker, take up little space on countertops and are easier to clean than their convection oven counterparts. These air fryers typically have between a 2-quart and 7-quart capacity, making them a good choice if you’re cooking for small groups.
Convection oven-style air fryers are larger and look like a toaster oven with a door that opens down. However, convection oven air fryers tend to take up more space on countertops, and they’re more difficult to clean.
Experts say the most important thing to consider when buying an air fryer is its capacity. As a rule of thumb, two quarts should be good for a couple of people, while six quarts or more should suit larger parties, experts say.
While shopping, keep in mind that air fryer capacity from a marketing perspective is different compared to air fryer capacity from a real perspective, says Pitre. When brands refer to capacity, they’re talking about how much food you could fit inside if you fill it to the brim, she says. But what capacity is really an air fryer’s internal surface area. That’s because when you cook inside it, you spread food out in a thin layer across the inside of the pan and don’t want to pile food on top of itself — if you do, only food at the top of the pile will cook.
Before you make a purchase, Pitre suggests looking at the cooking surface inside an air fryer and envisioning what you could fit on it, plus how many people that could serve. For example, could the air fryer fit four burgers, or only two? Could it fit a whole rotisserie chicken, or a few chicken breasts? Thinking this way may help you narrow down your options.
One of the best things about an air fryer is that you can cook almost anything inside it that you’d cook in an oven. It’s great for making meat, fish, vegetables and all types of potatoes, for example. If you don’t know where to start, visit any of your favorite recipe websites and type “air fryer” into the search bar — you’re guaranteed to find dozens of dedicated air fryer recipes, including those for different diets like vegetarian, vegan, gluten-free and more. Many cookbooks are also wholly dedicated to air fryer recipes, like Weinstein’s, as are Facebook, Instagram and TikTok pages.
Although an air fryer is a great tool to speed up cooking time, the food you make in it isn’t going to taste the same as something you deep fry, experts told us. Free yourself of those confines and you won’t be disappointed.
Also be aware that not every food can be cooked in the air fryer, specifically some frozen foods. After being put in the air fryer, frozen foods like chicken breasts or chicken nuggets, for example, look fully cooked and golden brown on the outside, even if they’re still raw on the inside. Additionally, Weinstein warns against cooking anything with a runny batter in an air fryer. It can make a mess and require more painstaking clean-up.
Yes, you can put tin foil and parchment paper in an air fryer, just like you can put these materials in the oven. In fact, some brands make tin foil and parchment paper air fryer liners you place food on top of so it doesn't dirty the basket or tray. Just be sure you don’t turn the air fryer on before first weighing down pieces of tin foil or parchment paper with food — if there’s nothing on top of it, it will blow around inside the appliance.
